From early in the morning until late in the evening our head chef works tirelessly downstairs in our kitchens, making everything from organic porridge with date syrup for breakfast to, chickpea and chorizo stew or our famous rare beef with truffle cream baguette for lunch, to raspberry almond tarts in the afternoon. We always work with small, high quality suppliers who we know personally such as father and son, Howard and George Blackwell (Rare Breed Meat Co, Essex) who supply all our meat. We also try to use ingredients that are fresh and seasonal so our menu changes almost every week.
We use Square Mile Roasters (Bethnal Green) for our espresso blend. They are generally regarded not only as the best roaster in the UK but also the world. We partner their espresso with milk from The Ladies Organic Dairy (Gloucestershire) which we believe to be the best, most nutritious and tastiest milk ever.
We are lucky enough to source our loose leaf teas from Waterloo Tea (Cardiff). They buy teas from some of the best estates in the world and many are award winning such as their China Breakfast tea (2008 & 2009 World Tea Awards winner). We always brew our tea properly i.e. for exactly the right amount of time at exactly the correct temperature - it does take longer but it always tastes better.
